Product Applications
- Oil & Fat Modification: Catalyzes interesterification to produce margarine, shortening and cocoa butter alternatives, reducing trans fats and improving plasticity. Also used in degumming and refining vegetable oils.
- Bakery & Dough Products: Enhances dough stability, improves bread volume and softness, delays staling, and boosts crispness in biscuits.
- Dairy Products: Accelerates cheese ripening, enhances flavor in yogurt and butter, and improves whey processing efficiency.
- Meat Processing: Improves flavor and juiciness in sausages and cured meats by breaking down fats.
